White Chocolate Mousse with Raspberry Coulis

2016 is ending, so the best way to receive the new year is with the following recipe that I detail below that is also super simple, sweet and light.



Ingredients for the Mousse:

- 180gr of White Chocolate.
- 200ml of Cream.
- 50ml of Milk
- 2 Egg Whites.

Ingredients for the Coulis:

- 120gr of Raspberries.
- 60gr of Sugar.
- 60ml of Water.


Elaboration:

First melt the chocolate with the milk in a pan over medium-low heat, at the same time whip the cream and the egg whites. Once melted the chocolate, let cool. Once it is cold, mix it with the cream with enveloping movements, next add the egg whites mounted to point of snow and mix it with enveloping movements again. Distributed the result in different glasses and let it cool for a few hours in the refrigerator.

To make the Coulis, put all the ingredients in a pot on the fire and when it boils leave it for 10 minutes. Once done, let it cool and then will use it to decorate the mousse at the same time we will serve it.

Carrot Cake

Christmas is always time to meet with the family to have dinner and have a good time and of course, always the hosts of the dinner we like to stand out and surprise with something. That is why today we are going to prepare this delicious cake.



Ingredients for the 2 cakes:

- 420gr of Flour.
- 6 Eggs.
- 4 Teaspoons of Yeast.
- 360ml of Oil.
- 4 teaspoons Cinnamon.
- 450gr of grated carrots.
- 210gr of Apple cut into small pieces.
- 180gr of Raisins.
- 360gr of Sugar.
- 2 Handfuls of chopped walnuts.

Ingredients for the cream and the decoration:

- 300 gr of Icing Sugar
- 125gr of Butter at room temperature.
- 125gr of cream cheese.
- Chopped walnuts to decorate.

Elaboration:

Preheat oven to 180°C (356°F)
Beat the eggs with the oil and the sugar, then we incorporate the flour, the cinnamon and the yeast and we re-mix well until obtaining a homogeneous mass.

Then add the apple, carrot, raisins and walnuts and re-mix everything. Distribute the resulting dough in 2 molds and put them individually in the oven at 180 degrees (356°F)  for about 45 - 50 minutes (check when it pass 40 minutes by punching with a toothpick, if it comes out clean we can remove the cake from the oven) Once the cakes are ready we leave them Cool and then unmold them.

To prepare the cream for decorate our cake, we will mix the butter with the sugar until obtaining a texture similar to the ice cream. Then add the cream cheese and beat for about 3 minutes. Finally we decorate the cake putting a little of the cream between the two cakes and put the rest on top, at the end decorate the top with chopped nuts.

Orange Mousse

It ends the year and I can only say thanks to all of  you that visit me here on the blog and on youtube. After this, I can only say that today as the last recipe of the year, we will prepare an orange mousse, which is super simple and with seasonal products.


Ingredients:

- 500ml of cream.
- 200ml of Condensed milk .
- 100ml of orange juice.

Elaboration:

First we will whip the cream, once mounted add the condensed milk and mix with encircling movements, very carefully to not lose the whipped cream. The last step is add the orange juice, and mix carefully.
Serve the mousse in small bowls and decorate with orange zest, reserve in the fridge until the moment to serve.

Chocolate Log (Christmas Log)

Christmas night is here and to sweeten this night we are going to prepare a Chocolate Log or Christmas Log ;)



Ingredients:

For the cake:
- 75gr of Flour.
- 75gr of Sugar.
- 3 Eggs.
- 1 packet of Yeast.
- A pinch of salt.

For the filling:
- 500ml of Cream.
- 25gr of cocoa powder.
- 100gr of sugar.

For the Coverage:
- 350gr of Black chocolate.
- 25gr of Butter.


Elaboration:
Preheat the oven to 180 degrees. First we are going to start with the cake, separate the yolks from the whites, whip the egg whites with a pinch of salt  until is whip add the half sugar. Then mix the rest of the sugar with the egg yolks. Now mix the egg whites with the yolks carefully. Finally add the flour with the yeast & mix carefully, pour the mixture onto a flat tray with baking paper, extend well and put in the oven to 180 degrees about 10 minutes.

Once the cake is ready, cut off the edges a little and put the cake on a clean cloth, roll up and let it cool. Prepare the filling, for that whip the cream with the sugar and finally add cocoa powder carefully. When the cake is cold, we unroll it and add the filling, then roll it again. Once done, cut a part to bring it up as another small log.

Finally prepare coverage, Melt the chocolate and add the butter, then pour the chocolate over the log trying to cover everything and finally decorated making marks with a fork as if they were veins.

Jijona nougat mousse

Hi everybody!! We have a great recipe today!!



Ingredients:

- 500ml of cream.
- 300gr of Jijona nougat.
- 100ml of milk.
- 3 sheets of neutral gelatin.
- 2 eggs.
- 3 tablespoons of sugar.
- A pinch of salt.

Praparation:

Put the sheets of neutral gelatin on water.

First whip the egg whites with the salt and  half of the sugar and reserved. Now whip the half of the cream and reserved too. Mix the yolk of the eggs with the rest of the sugar, and then, put the milk and the rest of the cram in a casserole. When the mix of milk and cream is hot, set aside fire and add the yolk of egg, and then, put it again in the fire (don’t stop removing).

Take it back when it begins to boil, and then, drain the neutral gelatin and add to the mix with the Jijona nougat, mix this. When all is well mixed, add to the mounted cream and mix this carefully. When all is integrated, do the same with the white of the egg.

After that put the mousse in small containers and  leave it in the fridge before serving (we can put crushed nougat as a decoration on the mousse).

Chocolate truffles

Hi everybody, today we are going to prepare chocolate truffles.




Ingredients:

- 250gr of black chocolate.
- 250ml of cream.
- 50gr of butter.
- 2 tablespoons cognac.
- Cocoa powder or chocolate sprinkles.

Prepration:

First put the cream in a casserole, and once it is hot add the butter. When butter is dissolved, remove from heat. Now put the mix of cream and butter to the bain marie, and add the chocolate to dilute it.
Continue stirring until the mixture thickens. When the mix thickens, put on the fridge for 3 hours.

After 3 hours, take it out from the fridge and make small balls.
Finally, when we have all the balls, coat them in cocoa powder or in chocolate sprinkles.

Marzipan

Hi everyone! Here we are with a new Christmas recipe.



Ingredients:

- 200gr of ground almond.
- 200gr of icing sugar.
- An egg (separate the white from the yolk).


Preparation:


First we have to mix the almond with the icing sugar. After that we put the white of the egg and mix all. When we see that everything is well mixed, we can make the different shapes.


We have two ways to make the shapes (Preheat the oven to 200 degrees). One way is make the shape with the paste that we have, and when we  have it, the marzipan is ready to be eaten.
The other way is make the shapes and put in a baking tray, then we have to paint the marzipan with the yolk of the egg, and now it’s ready to be placed in the oven at 180 degrees until golden. When the marzipan is golden, we can stop the oven and remove them.


As you can see, it’s very easy and simple to make marzipan at home. It’s better to make it at home than to buy it, because it’s cheaper.

Chocolate Nougat

Hi everybody!. Today we are going to make Chocolate nougat! Now we are going to start:



Ingredients:

- 100gr of black chocolate.
- 150gr of milk chocolate.
- 50ml of sunflower oil.
- 70gr of chocolate puffed rice.


Preparation:

First we have to dilute the chocolate, over medium heat, in a casserole and add the oil too.

If we have a template for nougat, we can do the form there. But if we don’t have a template, We can make our own template. We only have to cut, along, a brick of milk or wine. When we have it, put cling film inside with a little outside to wrap the nougat afterwards.

Now pour the chocolate into a bowl, and add the chocolate puffed rice. If we want we can make this chocolate nougat with: puffed rice, almond or hazelnut.
When we have it we put this mix in the template, spread it well in the template and wrap it  with the cling film. Put the nougat into the fridge for 24 hours.

The next day, the nougat will be ready to be taken from the mold and to be enjoyed!
